Healthy Pumpkin Spice Muffins

When the leaves start changing colors and the sweaters come out, fall is here!  One of the best parts of the fall season? That’s right…pumpkin spice! Now you can enjoy a healthy pumpkin spice muffin. All the flavor without the guilt


Ingredients needed:

  • 2 eggs
  • 1/2 cup melted coconut oil
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1/3 cup maple syrup
  • 2 cups oat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoon pumpkin pie spice
  • Optional: 1 cup of chocolate chips


Step 1: Preheat oven to 350o F. Prepare muffin sheet with cooking spray and place muffin liners into pan.

Step 2: Whisk together the eggs, coconut oil, pumpkin puree, maple syrup, and vanilla in a large bowl. Continue to whisk until ingredients are well mixed.

Step 3: In a separate, smaller bowl, combine the oat flower, baking powder, baking soda, salt, and pumpkin pie spice.

Step 4: Slow combine dry ingredients into the wet ingredients. Mix until well combined. Add in chocolate chips.

Step 5: Pour mixture into the muffin pan and bake for 22 minutes. Muffins will be done when a toothpick is inserted and comes out clean!
