Fall Favorites: Butternut Squash Soup

Fall is finally upon us! To welcome in the cooler Florida weather, nothing is more comforting than a warm bowl of soup. This butternut squash soup is bound to satisfy your craving while also being heart healthy! Check out the recipe below:


            • 1 1/2 cup chopped yellow onion
            • 2 tbsp olive oil
            • 1/4 tsp salt
            • 1/8 tsp black pepper
            • 3 lb roasted butternut squash, peeled and cubed
            • 6 cup vegetable stock
            • 1/8 tsp ground cinnamon


1.) Pour olive oil into a soup pot, turn to medium heat, add onion, salt, and pepper. Cook for 10 minutes.

2.) Add in butternut squash cubes and cinnamon. Stir for 2 minutes.

3.) Add vegetable stock, bring to a boil on high heat. Reduce to a simmer and cook for 2 minutes.

4.) Puree soup by using a blender. (This will need to be done in batches.)

5.) Taste and season accordingly. Enjoy!
